Spinach Egg Scramble (suppose to be frittata- ended up scramble)
4 eggs
Cheddar cheese
1 small onion
1 teaspoon garlic
1/2 tomatoes
1/2 spinach
Salt and pepper
Put 1/2 cup of spinach in a pan and cover with water. Heat on medium heat until spinach is wilted. In a separate pan saute onions and add your garlic to the mixture. Beat 4 eggs, add tomatoes, and salt and pepper in a different bowl. Drain the water from the spinach pan then pour the egg mixture and onion mixture into the pan. Let cook until the egg turns a bit fluffy. Sprinkle some cheddar cheese over the top and remove from heat once melted.

How to make it
- In a small bowl stir together tomatoes, avocado, onion, lemon juice and hot sauce. Season with salt and pepper. In another small bowl stir together sour cream and cilantro and salt and pepper to taste.
- Preheat broiler. Put tortillas on a large baking sheet and brush tops with oil. Broil tortillas on a rack set 2 to 4 inches from heat until pale golden. Turn tortillas and broil until other sides are pale golden. Sprinkle tortillas evenly with cheese and broil until cheese is melted and bubbling. Spread avocado mixture evenly over tortillas and top each with 1 of remaining tortillas, cheese side down, to make 2 quesadillas. Transfer quesadillas to a cutting board and cut each into 4 wedges
SO far so good. I am thinking next time I do a food challenge I will post pictures.
